Cook the meat at length cut into small regular cubes in a broth and it will permeate the flavour of carrots, onions, herbs and white wine. After 1 hour of cooking, remove the meat, sieve the broth and keep everything. Then put into your casserole the white sauce that will be diluted later with the cooking broth. Finish on very low heat for 10 minutes.
