Originally from Szechuan, a mountainous province in central China, Szechuan pepper does not sting, but its rich flavor leaves your mouth with delicious blend of spices with strong fragrance. The black seeds are hard and bitter, so it is advisable to use only the envelope of the bay. When it is lightly toasted, ground and mixed with salt, it becomes the Japanese Sansho and appears as a spice table.
