Brown mustard is a sweet mustard. It is made as before to the grindstone by the Fallot from mustard seeds, vinegar, sugar and spices. It is distinguished by its pleasantly sweet flavor.
It accompanies grilled meats and is child-friendly because it does not sting as much as its cousin, the Dijon mustard.
