Awareness of Dijon mustard has been gained over the centuries thanks to the mustard seed and the use of verjuice (juice of green grapes), both harvested in Burgundy. Unfortunately, Burgundy has lost the exclusive geographic manufacturing of this product which is no longer a designation process.

Following traditional recipes, Fallot decided to revive the real Burgundy Mustard produced exclusively in the Burgundy territory with seeds grown in Burgundy and white wine from white grape of Burgundy.

Fallot's efforts have given birth to such as mustard in 2009 when Fallot obtained the Protected Geographical Indication (PGI).

It goes well with all meat, and can be used in mayonnaise or in many salad dressings.
