These mackerel fillets were worked by hand throughout the production process. Fish are selected fresh and go through a quality control, then they are cooked whole in broth which preserves their flavour and fondant. Trimming, casing and fleurissage are entirely handmade. Here the mackerel fillets are lightly scented with a little olive oil, some lemon and some berries.

mackerel fillets (69%), extra virgin olive oil (23%), water, lemon (3, 6%), mixing 5 bays (pepper black, green and white, pink peppercorns, allspice) (0, 5%), salt, thickener: xanthan gum.
