Shelf life information

The rutabaga is preserved in its kraft paper, in the crisper of the refrigerator up to 3 weeks. However, the more a rutabaga is old, the more the heart becomes stringy and takes long to cook. It can also be frozen after 5 minutes in salted water, but it must be rapidly consumed because it quickly becomes porous.

The rutabaga is as good mashed in gratin and even fried as could be the potato. This cooks as turnip but must be cooked longer.
