description
This Pimenton de la Vera or sweet chili pepper A.O.C. de la Vera has a taste characteristic of traditional Spanish meals. Its red color is intense, its scents is powerful, but not agressive. Once in your mouth, you will find the strength, not really that hot, of the spice whose flavor is so particular. The chili peppers are picked then dried following a traditional method, before being smoked with oak wood. They are then crushed in a millstone. This spice is the base ingredient of Spanish gastronomy. The Pimenton de la Vera is already used in the making of chorizo, paella valenciana, or the seasoning of Pulpo Gallega.

Producer
Ramón Mirón inherited his ancestor’s dexterity, necessary for the making of the sweet pepper, or the paprika de la Vera. His quest for the maximal quality has led him to become one of the most valuable providers for Madrid most prestigious gourmet delicatessens, or for famous chorizo producers, such as Joselito.
This is how the Santo Domingo company produces yearly about 100 000 Kilos from the Capsicumannum variety. The transformation is fully hand-crafted, and the raw products come uniquely from Aldeanueva del Camino, Zarzade Granadilla, and from the banks of the Ambroz River (Estrémadure).
