The pak choi (or bok choy or Chinese cabbage), is native to China. It is a vegetable that is grown for its leaves and stems. This long cabbage has white bases and green leaves like celery or carding chard, but it tastes less pronounced than the cabbage, its flavour is slightly spicy.

The pak choi will keep for several days in the crisper of the refrigerator and up to 12 days if it is not washed.

The Chinese cabbage is eaten raw or cooked. It is ideal cooked in a velvety soup, or braised with fish. Finely cut, it is cooked quickly over high heat in a wok with a little oil, a little garlic or crushed ginger. One can also cook it en papillote with white fish and Asian spices.
