Cultivated for centuries for its flesh, the pumpkin was introduced in Europe by Christopher Columbus. The pumpkin seed oil is of less common use, it has however re-mineralizing virtues and will accompany with dignity a foie gras or a salad of beets. The pumpkin seed oil is thick, it has green to red reflections. Its nose is rather rustic and offers aromas of fresh quince and juice of roasted poultry. It has a taste of quince and the notes of white gravy.

Leeks with nutmeg and soft-boiled eggs

Ingredients for 4 persons :

  • 8 medium sized leeks
  • 4 very fresh eggs
  • nutmeg
  • Fleur de Sel

Preparation :

  • Steam the leeks
  • Plunge the eggs during 4 to 5 minutes in boiling water (cool them well by plunging them in ice-cold water before shelling them)
  • Serve the leeks while still warm, the eggs cut in half
  • Add the nutmeg and the fleur de sel before pouring a dash of pumpkin seed oil.
