Chioggia beet is a variety native to the Italian city of the same name, on the shores of the Adriatic. Its texture and flavour are more delicate than those of conventional beet. When cut, the flesh reveals a surprising alternating bright pink and white rings that make the particularity of this beet. After cooking, the meat becomes pale pink.
