Truffles
Underground fungus, the truffle is eaten since ancient times but it was not until the early nineteenth century that Brillat-Savarin gave it its fame. The most popular is the white Alba truffle (Tuber magnatum Pico) but its cousin, the Perigord truffle (Tuber melanosporum Vitt.) also has its followers.
