The Tome des Bauges is a cheese with a gray crust, irregular and flowery. Its paste is ivory to yellow, with a few small holes, and it has a very fruity taste.
History
This cheese is typical of the Alps and has always been manufactured and consumed daily by farmers. "Tome"originally "Toma"means in Savoy dialect "cheese made in the mountain pastures."While it is reserved for domestic consumption, the Tome des Bauges is gradually gaining acclaim and its place on the cheese platters .
