The Saint Nectaire hides under its rustic crust, a soft and fluffy soft dough. The crust of Saint Nectaire can have very different aspects depending on its ripening period. It is always irregular, never with only one color. It is speckled with white, brown or gray, on an orangey pink background. Its paste is of a brilliant cream colour and it may have a few fermentation holes

History

Auvergne country is known for its soft and chewy dough and had the place of honour at the royal table of Louis XIV. While its Appellation area may be one of the smallest in France, it is located in the heart of the famous chain of Auvergne Volcanoes and its reputation is second to none.
