History
This sheep cheese, which takes its name from the small town of Pont l'Eveque, between Lisieux and Deauville, was already much appreciated in Normandy in the middle Ages. It acquired its square shape in the seventeenth century in order to differentiate itself from other sheep cheeses of the Auge, whose common ancestor is the Cherub PDO since 1972.<
