History
In the fourteenth century, the cheese from sheep becomes an exchange value recognized in many leases or sales and it is the first source of income for the shepherds. This ancestral production has developed and continues today. Until the the 70's, sheep's milk collected in Béarn and the Basque Country was thus transformed into Roquefort breads. This outlet has had a major influence on the development of sheep milk production in the territory which saw its volumes grow significantly.
