a grassland cheese by excellence, The AOP Grand Aubrac Laguiole is a seasonal product of exception composed exclusively of milk from the grazing period. Intense fragrance that expresses the richness of the flora of Aubrac and a full-bodied taste that reveals dry hazelnut aromas, a long finish supported by manufacturing uncooked milk are the result of care for its selection and its refining.
History
In the twelfth century, it was the monks of Aubrac Laguiole which set the manufacturing rules. The 1789 revolution emptied the abbeys and ousted the lords of the land but the custom of the summer pastures continues. We then constructed the "mazucs"simple huts dug in the ground and covered with branches that house the production of cheese in the summer months. With the Laguiole's reputation rapidly spreading, the new owners are building many "burons"used to manufacture cheese and housing the buron men (cowherds and cheese rs). Aubrac became the dynamic center of the region. AOP since 1961
