History
The name of the cheese Crottin de Chavignol is linked to the Chavignol hamlet in the municipality of Sancerre in the Berry. The habit of letting the cheeses mature till the end of the season when they become has given the name of Crottin (manure). Although the name Crottin de Chavignol is unsuitable when it comes to young or middle-aged cheeses, this name was selected as the appellation of origin.
