History
the Cheddar cheese history is related to Cheshire. The name of this cheese comes from the Cheddar Valley, from where it originates. This type of cheese is so widespread that it is now impossible to append to it a label of origin. However, the European Union recognizes the name West Country Farmhouse Cheddar. To keep it, Cheddar cheese must be made in the traditional way with local ingredients from four counties in the southwest of England. The orange colour of this English cheese is often obtained using the annatto, a tropical tree extract. Three theories exist about this technique: ensure colour consistency batch of cheese lot; help the buyer choose if cheese is not identified; identify the region of production. This cheese is probably the most sold in the world.
