History

the cheese Brillat-Savarin was created at the request of a cheese trader, the manufacturer of the excelsior; it is the oldest cheese with enriched fat, invented in the late nineteenth century. He was to present a cheese of a larger size than that of the archetype and that may be served during high-level gourmet meals, in times when they served cheese only when it was tolerated. The name of this cheese from Normandy, originally, was awarded by Henri Androuët within thirty years, in tribute of the famous French gastronome Brillat-Savarin.
