Theappenzeller features an ivory to pale yellow colour with little holes and regular and smooth crust. Its texture is firm and rubbery, with a slightly spicy taste due to a longer ripening 4 to 6 months. It owes its full fruity flavour to its brine with mountain herbs and spices with which it is regularly brushed. The maturing of this Swiss cheese lasts three months in a cool, damp cellar.
