Preserved Whole Goose Foie Gras is firmer and less unctuous than the Semi-preserved foie gras. However, as a great vintage, it gets better with time and becomes smoother. This is how the Foie Gras has traditionally been prepared for over two centuries.

Heir to a tradition initiated by Jean-Pierre Clause, who created the foie gras in Strasbourg in 1780, the House Edouard Artzner continues to this day gastronomic flagship.

His chefs apply the same recipe for over two centuries, from selection of raw material to the care taken at each stage of their preparation, voluntarily maintained craft. All foie gras are hand-sorted before being de-veined cold to be free from any imperfection. They are then seasoned with a jealously kept secret mixture of 14 spices that gives them a unique and inimitable flavor.

Preparation

  • Before use, place the foie gras in the refrigerator for at least 6 hours
  • Remove foie gras from the refrigerator half an hour before serving
  • Remove the packaging and cut the foie gras in slices of a width not exceeding one centimeter
  • To obtain neat slices of about 50g per person, use a knife without teeth that has been previously passed over the hot water
  • Serve the foie gras on plates previously cooled

Tasting

To be tasted at its fair value, the foie gras requires the papilla to be sensitive, so we advise you to eat foie gras at the beginning of meals.

In general, the foie gras is served without any tricks, accompanied by toasted bread or not. The foie gras goes well with Alsatian white wine like a Pinot Gris or Gewurztraminer.

Conservation

Preserved foie gras is sterilized, that means that it has been treated in an autoclave between 105 ° C and 115 ° C. Thus, it can be kept for several years at room temperature. After opening, the foie gras can be stored 3 days in the fridge, wrapped in cellophane.
